House-made papusa, stuffed with a spiced plantain & black bean puree, smoked tomato salsa roja, aged provolone, fried jalapeno rings

Provoleta Salad
Baby greens, topped with a Fire Roasted spit of aged provolone, aubergine and waxy potatoes.  Topped with a house-made garlic dressing

Third Course

Gaucho Style Short Rib
3 Day short rib, house-made chimichurri, garlic polenta, Eggplant Asado

Pairing: Humberto Canaele, Gran Reserva Malbec 2011

Fourth Course

Torta Rogel
Crispy pastry, layered with fresh dulce de leche,  topped with an Italian Meringue
